Golgappa, also known as pani puri, is a popular street food in India. It is a crispy, fried dough ball filled with a mixture of potatoes, chickpeas, and spices, and served with a tangy water. Here is a recipe for making golgappa at home:

Ingredients:

1 cup all-purpose flour

1/2 cup semolina flour

1/4 cup fine sooji (semolina)

1 tsp cumin powder

1 tsp carom seeds (ajwain)

Salt to taste

Oil for frying

For the filling:

2 cups boiled and mashed potatoes

1 cup boiled chickpeas

1/4 cup finely chopped onions

1/4 cup finely chopped tomatoes

1/4 cup finely chopped coriander leaves

1 tsp cumin powder

1 tsp chaat masala powder

Salt to taste

For the tangy water:

1 1/2 cups water

1/4 cup tamarind pulp

1/4 cup mint leaves

1/4 cup coriander leaves

1/4 cup green chili

1 tsp cumin powder

1 tsp sugar

Salt to taste

Instructions:

In a large mixing bowl, combine the all-purpose flour, semolina flour, fine sooji, cumin powder, carom seeds, and salt. Mix well.

Slowly add water to the flour mixture, kneading the dough until it becomes smooth and pliable. Cover the dough and let it rest for at least 30 minutes.

Meanwhile, make the filling by mixing together the boiled and mashed potatoes, boiled chickpeas, chopped onions, chopped tomatoes, chopped coriander leaves, cumin powder, chaat masala powder, and salt. Mix well.

Make the tangy water by blending together the water, tamarind pulp, mint leaves, coriander leaves, green chili, cumin powder, sugar, and salt. Strain the mixture to remove any solids.

Heat oil in a deep frying pan over medium heat.

Roll out the dough into small balls and flatten them slightly. Carefully place them in the hot oil and fry until golden brown and crispy. Remove from the oil and place on a paper towel to remove any excess oil.

To assemble the golgappa, make a small hole at the top of each fried dough ball and fill it with the potato filling. Dip the filled golgappa in the tangy water and serve immediately.

Enjoy your homemade golgappa! You can adjust the seasoning of the filling and tangy water to your taste.
